12 medium or large sized Prawns- cleaned, deveined, 1/2 Inch Ginger, 2 Onions chopped 2 Tomatoes chopped, Preferably without skin, 2 Green Chilies- minced A Little Fresh Coriander 1 Tsp Sugar- apinch, Salt & Vinegar for taste. Kashmiri Chillies 2 each, Flakes Garlic 1 Tsp Cumin seeds, 1 Tsp black Peppers, 1 Tsp Turmeric Powder, 2 tbsp Cashew Fenny, cashewnuts fried - garnish, orange garnish
Heat some oil in a pan, Add the cumin seeds, kashmir red chillies and fry for a minute or so. Add the onions, ginger, garlic, green chillies, diced tomatoes and saute well. Add the prawns to the pan and cook for a minute. Then followed by the turmeric and pepper powder. Deglaze the pan with fenny and vinegar. Cook for 5 minutes . Season to taste garnish with fried cashewnuts, oranges and coriander sprigs.
